500 grams (1.1 lb) lotus root
100 grams (7 2/3 tbsp) sugar
10 grams (2 tsp) white vinegar
100 grams (6 tbsp) water
1. Wash the lotus root clean and cut it across the grain into slices 0.3 cm (0.12 inch) thick. Wash clean again, drain off the water and put in a basin.
2. Put water in the pot. Add sugar and bring to a boil. When the sauce thickens, add the vinegar and the lotus root and soak for 1 hour. Then it is ready to serve.
Features: Snow white in color, crispy and soothing to the mouth.
Taste: Sweet with a sour touch.
