Manchu-style Candied Fritter
250 grams (0.55 lb) wheat flour
4 eggs
200 grams (0.44 lb) sugar
100 grams (0.22 lb)maltose
50 grams (0.11 lb) preserved fruit
500 grams (1 cup) cooking oil


1. Whip the eggs and mix with the flour. Press into thin slices 0.2 cm (0.08 inch) wide and 15 cm (6 inches)long.

2. Add the cooking oil and heat till it is 180-200 C (355-390 F) hot. Deep-fry the srips of dough and bring them out when they are crispy. Pour out the oil.

3. Put 50 g (3 tbsp) of water into the pot, add the sugar, maltose and use a low heat to bring the mixture to a thick syrup. Add the fried dough strips and the preserved fruit, well mix and place into a plate and press hard. When it cools off, cut it into small rectangular shapes and serve.

Features: Beautiful in color, it easily melts away in the mouth.
