Insights into Fuling pickles

Editor's Note: On Friday, reporters toured the headquarters of Chongqing Fuling Zhacai Group Co., Ltd., one of the largest domestic manufacturers of preserved pickles, in Fuling District in southwest China's Chongqing Municipality. The company, which is currently listed with a market value of over 30 billion yuan, has nine subsidiaries, nine production plants, one digital production workshop, 15 automated production lines, and an annual production capacity of 200,000 tons of pickled vegetables.

The dish, invented by Qiu Shou'an in 1898, ranks alongside Europe's pickled cucumbers and Germany's sauerkraut as one of the world's three most famous pickled dishes. Fuling pickles, known as "zhacai" in Chinese, are exported to more than 50 countries and regions, including Russia, Japan, Singapore, and South Africa. They are also one of the biggest local food brands and economic drivers in Chongqing, greatly helping poverty alleviation efforts, and will continue to support rural vitalization in the area. There are currently more than 500,000 farmers engaged in planting the vegetable, with another 100,000 people working in related fields such as processing, sales, transportation, and ingredients production.
