Xinjiang Uygur Autonomous Region, located in northwest China, is a land of myriad culinary delights. Xinjiang cuisine is a harmonious blend of Uygur, Hui, Han, Kazakh and Russian culinary influences and most of the dishes have a tangy and spicy taste.
