Driven by robust demand during the holidays and the abundance of fresh ingredients following the start of the fishing season, fish cake manufacturers in Longgang, Zhejiang province, are experiencing a booming market. This surge has continued to boost revenues for the local specialty food sector while burnishing the region's culinary reputation.

At Wenzhou Baoweixin Food Co. Ltd., workers are processing the remaining orders from the National Day holiday. Huang Changtang, the company's general manager, said that during the Mid-Autumn Festival and National Day holiday period, many residents chose local specialty foods as gifts. This led to a sharp increase in the demand for fish cakes, sparking a production rush that began a month before Mid-Autumn Festival and has lasted well past the National Day holiday.

"Our products are highly sought after as souvenirs and gifts," Huang said. "We have been fully occupied with production a month before the Mid-Autumn Festival."

He also said, "We also have many out-of-town visitors dropping by to buy them. Many customers wait until the fishing moratorium ends to buy our fish cakes."

The combination of holiday shopping and the high-quality ingredients at the start of fishing season has brought steady revenue growth to Longgang's specialty food industry. Evolving from a holiday souvenir into an everyday dining staple, fish cakes are not only driving the steady development of the local food processing sector but also making Longgang's signature cuisine increasingly famous.
