Say cheese

The fondue pot holds a deliciously gooey melted cheese (mostly Emmental and Gruyere), into which diners dip ingredients such as chopped bread. Raclette refers to both a semi-firm, salted cheese made of cow's milk, and the way it is served on a two-leveled heating pan device. Raclette cheese is heated on the lower level, while the pan at the top can be used to barbeque meat. Usually a raclette comes with small boiled potatoes, pickled onions and gherkins, plus meats. At Cafe Swiss cherry tomato is also served, with pork and beef served on skewers.

Cheese fondue and raclette is included in the a la carte menu. Cafe Swiss also offers a buffet featuring salad bar, main dishes and desserts. Fondue menu for two costs 220 yuan (US$30.6), and raclette costs 158 yuan with potatoes, dips and condiments. Raclette with four pork and beef skewers costs 178 yuan for two.

Cafe Swiss has been preparing fondue and raclette since the hotel was established. Cheese used is imported from Switzerland. Chef Mario Xu prepares the fondue and raclette with proper facilities and skill.
