The Chinese character 肉 ("rou"), meaning meat, is a keyword for the 26th day of the 12th lunar month. This year, it falls on Jan. 17.
From this day, dishes for the sumptuous New Year's Eve feast are prepared in succession. Eating meat was something that poor people could only dream about in the past when animals were scarce, so this desire could only be realized during the Spring Festival.
