-- Laba Tofu (腊八豆腐)

Laba Tofu is a specialty of Yixian County, Huangshan City. On the eighth day of the last lunar month of each year (the day is called Laba in Chinese), the Yixian people will lay out the tofu under the sun, hence the tofu’s name of La Ba Tofu. After being exposed for some time, the tofu turns golden on the surface and can then be used to make dishes. The cooked tofu tastes quite soft and salty, as well as a little sweet.
